Ingredients
- 2 1/2 cups beef broth ⓘ
- 1 cup wild rice ⓘ
- 1 cup long grain rice ⓘ
- 1 cup barley ⓘ
- 1/2 cup butter or margarine, melted ⓘ
- 4 cups chicken broth ⓘ
- 1 1/4 cups celery, diced ⓘ
- 3/4 cup green pepper, diced ⓘ
- 3/4 cup sweet red pepper, diced ⓘ
- 1/2 cup green onions, sliced ⓘ
- 2 cloves garlic, minced ⓘ
- 2 tablespoons butter or margarine, melted ⓘ
- 1/4 cup parsley, minced ⓘ
- 1/4 cup butter or margarine, melted (optional) ⓘ
Instructions
- Combine beef broth and wild rice in an ungreased 1 1/2-quart casserole dish.
- Cover and bake at 350°F for 1 hour and 45 minutes or until rice is tender and liquid is absorbed.
- In a large skillet, sauté long grain rice and barley in 1/2 cup melted butter over medium-high heat for 5 to 6 minutes until lightly browned.
