Ingredients

  • 2 1/2 cups beef broth
  • 1 cup wild rice
  • 1 cup long grain rice
  • 1 cup barley
  • 1/2 cup butter or margarine, melted
  • 4 cups chicken broth
  • 1 1/4 cups celery, diced
  • 3/4 cup green pepper, diced
  • 3/4 cup sweet red pepper, diced
  • 1/2 cup green onions, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter or margarine, melted
  • 1/4 cup parsley, minced
  • 1/4 cup butter or margarine, melted (optional)

Instructions

  1. Combine beef broth and wild rice in an ungreased 1 1/2-quart casserole dish.
  2. Cover and bake at 350°F for 1 hour and 45 minutes or until rice is tender and liquid is absorbed.
  3. In a large skillet, sauté long grain rice and barley in 1/2 cup melted butter over medium-high heat for 5 to 6 minutes until lightly browned.
