Ingredients

  • oil
  • 1 clove garlic, minced
  • 1 small onion, chopped
  • 4 cups leftover beef, shredded
  • 4 to 5 fresh tomatoes, chopped
  • 1 (6 oz.) can chopped green chili peppers
  • 1/2 teaspoon cumin
  • 1 (8 oz.) can taco sauce
  • 1 package flour tortillas
  • 1 (8 oz.) can enchilada sauce
  • 1 cup grated Cheddar cheese

Instructions

  1. Heat oil in a skillet and sauté garlic and onion until tender.
  2. Add shredded beef, chopped tomatoes, chopped green chili peppers, cumin, and taco sauce to the skillet.
  3. Simmer the mixture for 1 hour. Thicken the sauce by adding cornstarch or flour dissolved in cold water.
  4. Heat the flour tortillas until warm.
  5. Spoon the beef mixture onto each tortilla and roll up to form burritos.
  6. Heat the enchilada sauce and stir in the grated Cheddar cheese until melted.
  7. Spoon the red sauce over the burritos and serve.
