  1. Rub the beef roast well with salt and pepper.
  2. Brown the roast on both sides in a skillet or oven-safe pan.
  3. Place the browned roast in a covered roaster.
  4. Cook at 325°F (160°C) for 3.5 to 4.5 hours.
  5. During the last hour of cooking, add the potatoes, onions, and carrots around the roast.
  6. Optionally, add more vegetables if cooking for a larger crowd.
  7. Remove from oven, let rest briefly, then serve the roast with the roasted vegetables.
