Roast Beef Party Logs

Ingredients
- 4 c. ground cooked beef roast ⓘ
- 1 Tbsp. steak sauce ⓘ
- 1/2 c. finely chopped celery ⓘ
- 1/4 c. sweet pickle relish ⓘ
- 1/2 to 2/3 c. mayonnaise ⓘ
- 24 oz. cream cheese, softened ⓘ
- 1 c. grated Cheddar cheese ⓘ
- 2 Tbsp. finely chopped green onions ⓘ
- 1 Tbsp. chopped pimiento ⓘ
- 2 Tbsp. finely chopped bell pepper ⓘ
- 1/4 c. paprika ⓘ
- 2 c. chopped pecans ⓘ
Instructions
- In a large bowl, combine the ground cooked beef roast, steak sauce, finely chopped celery, sweet pickle relish, and mayonnaise.
- Mix well.
- Shape the mixture into logs about 5 to 6 inches long.
- Refrigerate the logs.
- In another bowl, cream together the softened cream cheese and grated Cheddar cheese.
- Add the finely chopped green onions, chopped pimiento, and chopped bell pepper to the cheese mixture.
- Mix well.
- Spread the cheese mixture over the beef logs, using your hands or a plastic sandwich bag to keep your hands clean.
- Sprinkle each log with paprika.
- Roll each log in chopped pecans to coat evenly.
