Ingredients

  • 4 c. ground cooked beef roast
  • 1 Tbsp. steak sauce
  • 1/2 c. finely chopped celery
  • 1/4 c. sweet pickle relish
  • 1/2 to 2/3 c. mayonnaise
  • 24 oz. cream cheese, softened
  • 1 c. grated Cheddar cheese
  • 2 Tbsp. finely chopped green onions
  • 1 Tbsp. chopped pimiento
  • 2 Tbsp. finely chopped bell pepper
  • 1/4 c. paprika
  • 2 c. chopped pecans

Instructions

  1. In a large bowl, combine the ground cooked beef roast, steak sauce, finely chopped celery, sweet pickle relish, and mayonnaise.
  2. Mix well.
  3. Shape the mixture into logs about 5 to 6 inches long.
  4. Refrigerate the logs.
  5. In another bowl, cream together the softened cream cheese and grated Cheddar cheese.
  6. Add the finely chopped green onions, chopped pimiento, and chopped bell pepper to the cheese mixture.
  7. Mix well.
  8. Spread the cheese mixture over the beef logs, using your hands or a plastic sandwich bag to keep your hands clean.
  9. Sprinkle each log with paprika.
  10. Roll each log in chopped pecans to coat evenly.
