Ingredients

  • 1 1/2 to 2 lb. flank steak
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. prepared mustard
  • 1 1/2 cups day-old bread, cut into 1/2-inch cubes
  • 1 tsp. poultry seasoning
  • 1 medium onion, chopped
  • 1/2 cup chopped celery
  • 1/4 cup melted shortening
  • 2 Tbsp. flour
  • 1 cup water or beef broth

Instructions

  1. Score the flank steak on both sides.
  2. Sprinkle both sides with salt and pepper.
  3. Spread prepared mustard over the top of the steak.
  4. Toss bread cubes, poultry seasoning, chopped onion, and chopped celery with melted shortening.
  5. Spread the bread mixture evenly over the top of the steak.
  6. Roll up the steak starting from the narrow end.
  7. Fasten the rolled steak with skewers.
  8. Brown the rolled steak well on all sides in hot fat in a Dutch oven over medium heat.
  9. Add water or beef broth to the Dutch oven.
  10. Cover tightly and cook over low heat for 1 1/2 hours, or until tender.
  11. Alternatively, cover and bake in a moderate oven (350°F) for 2 hours.
