Rolled-Up Chicken Breasts
Juicy rolled chicken breasts filled with butter and tarragon, then breaded and baked in a creamy mushroom and sherry sauce, perfect for elegant family dinners or special occasions.

- Flatten the chicken breasts slightly without pounding.
- Season with salt, pepper, and place a pat of butter with 1/2 teaspoon tarragon inside each breast.
- Roll up the breasts and freeze until firm.
- Dip the frozen rolls in flour.
- Mix the egg with 1 tablespoon water and dip the rolls in this mixture.
- Then coat again in flour and bread crumbs.
- Brown the coated chicken rolls in oil or Crisco.
- Arrange the browned rolls in a baking dish.
- Add mushroom soup and sherry to the pan and stir to combine.
- Bring the mixture to a boil.
- Pour the sauce over the chicken in the baking dish.
- Bake at 350°F for 1 to 1.5 hours until cooked through.
