  • 1 large Chinese cabbage (nappa)

  • 1 cup shredded Jack cheese
  • 1/3 cup grated Parmesan

Instructions

  1. Cut off the core end of the cabbage and select 15 of the largest leaves.
  2. Set aside the remaining cabbage.
  3. In a large pot, cook the cabbage leaves for about 2 minutes in boiling salted water.
  4. Cook 4 to 5 leaves at a time for ease.
  5. Drain and let cool.
  6. Heat salad oil and margarine in a large frying pan over medium heat.
  7. Add chopped onion and minced garlic, cook until fragrant.
  8. Add sliced mushrooms and cook until well coated and softened.
  9. Stir in paprika and cook until mushrooms release juice and most of it evaporates.
  10. Add cooked rice and stir to combine.
  11. Season with salt and pepper, cook for 1 more minute.
  12. Remove from heat and stir in shredded Jack cheese.
  13. Spoon the filling onto each cabbage leaf, tuck sides over, and roll to enclose.
  14. Place the rolled cabbage leaves seam-side down in a baking dish.
  15. Cover and bake at 350°F (175°C) for 30 minutes.
