Ingredients

  • 32 oz. jar sauerkraut
  • 1/2 cup chopped onion
  • 1/2 cup parsley
  • 2 Tbsp. caraway seed
  • 4 cups Swiss cheese, shredded
  • 1 1/3 cups Thousand Island dressing
  • 1 lb. can sliced corned beef
  • 6 slices rye bread

Instructions

  1. Combine sauerkraut, chopped onion, parsley, and caraway seed in a 13 x 9 x 2-inch pan. Top with 2 cups of shredded Swiss cheese and 2/3 cup of Thousand Island dressing.
  2. Layer sliced corned beef over the sauerkraut mixture. Add the remaining cheese and dressing over the beef.
  3. Toss bread cubes with margarine and spread on top of the casserole.
  4. Bake in a 375°F oven for 35 minutes until hot and bubbly.
