- Combine sauerkraut, chopped onion, parsley, and caraway seed in a 13 x 9 x 2-inch pan. Top with 2 cups of shredded Swiss cheese and 2/3 cup of Thousand Island dressing.
- Layer sliced corned beef over the sauerkraut mixture. Add the remaining cheese and dressing over the beef.
- Toss bread cubes with margarine and spread on top of the casserole.
