Ingredients

  • 1 1/2 lb ground venison
  • 1/2 lb lean ground pork
  • 1 egg
  • 1/2 cup plain bread crumbs
  • 1/2 cup finely chopped onion
  • 2 tablespoons dried parsley
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • flour
  • 1/3 cup oil
  • 1 large onion sliced into rings
  • 2 (4 1/2 oz) jars sliced mushrooms drained

Instructions

  1. In a large bowl, combine ground venison, ground pork, beaten egg, bread crumbs, chopped onion, dried parsley, salt, garlic powder, and pepper.
  2. Mix well and shape into 10 patties.
  3. Thoroughly coat each patty with flour.
  4. Heat 1/3 cup oil in a skillet over medium heat.
  5. Add patties and brown on both sides.
  6. Transfer patties to a greased roasting pan.
  7. Place sliced onion rings and drained mushrooms over the meat.
  8. Add the remaining tablespoon of oil to the drippings in the skillet.
  9. Stir in 2 tablespoons flour and cook over medium heat until the flour begins to brown.
  10. Gradually stir in beef broth and cook until slightly thickened, stirring constantly.
  11. Pour gravy over the steaks.
  12. Cover and bake in a preheated oven at 350°F for one hour.
