Ingredients

  • 1 lb. sirloin
  • 1/2 lb. center cut pork chops
  • 1 lb. chicken breasts
  • 2 green peppers
  • 4 hot peppers
  • 2 cloves garlic
  • 4 tsp. chili powder
  • 1 tsp. fresh oregano
  • 1 medium onion
  • olive oil
  • 1 gal. tomato juice
  • 2 pkg. El Paso chili mix
  • 1 can kidney beans
  • 1 bottle Sam Adams wheat beer
  • 2 cans tomato paste
  • 1 tsp. basil
  • 1 bay leaf

Instructions

  1. Using a meat grinder on coarse, grind the sirloin, center cut pork chops, chicken breasts, green peppers, hot peppers, garlic, and onion.
  2. Add olive oil to the bottom of a 5-quart Dutch oven.
  3. Brown the ground meats and vegetables; pour off excess fat.
  4. Add tomato juice, tomato paste, chili mix, kidney beans, Sam Adams wheat beer, chili powder, oregano, basil, and bay leaf to the Dutch oven.
  5. Bring the mixture to a boil.
  6. Stir occasionally, then cover the pot.
  7. Reduce heat and simmer for 1 hour.
  8. Let cool to room temperature, then reheat before serving.
