  2. Drain excess fat and liquid.
  3. Stir in black beans, cooked rice, and 1 cup of salsa. Mix well.
  4. Spread about 1/2 cup of sausage mixture down the center of each tortilla.
  5. Sprinkle each with 1 tablespoon of shredded cheese.
  6. Roll up each tortilla and place seam side down in a greased 13 x 9 x 2-inch baking dish.
  7. Top with remaining salsa, cover, and bake at 350°F for 30 minutes.
  8. Uncover, sprinkle with remaining cheese, and bake an additional 5-10 minutes or until the cheese is melted.
