Sausage Stir-Fry

Ingredients

  • 2 c. coarsely shredded cabbage
  • 1 small onion, sliced
  • 3 celery ribs, diagonally sliced
  • 4 to 5 pieces cooked link sausage (about 1 lb.), sliced in rings
  • 1 c. V-8 juice
  • 2 c. weak beef broth (made with bouillon cubes)
  • 1 1/2 Tbsp. soy sauce
  • pepper
  • 2 Tbsp. cornstarch

Instructions

  1. Heat a wok or large pot until hot.
  2. Add a small amount of oil to coat the bottom.
  3. Add cabbage, onion, and celery and stir-fry until about half done.
  4. Add sliced sausage rings and continue stirring over high heat until sausage is heated through.
  5. Add V-8 juice, beef broth, soy sauce, and pepper.
  6. Cook until heated through.
  7. Thicken the mixture with cornstarch dissolved in a little of the reserved beef broth.
  8. Heat through again.
  9. Add sesame oil just before serving.
  10. Serve over hot, fluffy rice.
