Ingredients

  • 1 lb. Italian sausage
  • 1 c. chopped onion

  • 5 c. beef broth

  • 1 bag frozen tortellini

Instructions

  1. Cook Italian sausage in a large skillet until browned; add chopped onion and garlic and sauté until fragrant.
  2. In a large saucepan, combine beef broth, water, red wine, chopped tomatoes, tomato sauce, diced green pepper, basil, and oregano.
  3. Add the cooked sausage mixture to the saucepan and bring to a boil.
  4. Add sliced carrots and zucchini to the soup and simmer for 20 to 30 minutes.
  5. Before serving, bring the soup to a boil again and add the tortellini.
  6. Cook for 8 to 10 minutes until tortellini are tender.
  7. Serve hot, sprinkled with cheese and chopped parsley.
