Ingredients

  • 2 lb. carrots, cut
  • 2 lb. celery, cut
  • 2 lb. squash, cut
  • 2 lb. zucchini, cut
  • 4 medium onions
  • 1 lb. green bell pepper, sliced
  • 1 lb. red bell pepper, sliced
  • 1/2 cup vegetable oil
  • 1/2 stick butter
  • parsley
  • sweet basil
  • fresh garlic, chopped

Instructions

  1. In a large skillet, bring vegetable oil and butter to a boil. Add chopped garlic and stir.
  2. Add carrots, celery, squash, zucchini, green bell pepper, and red bell pepper. Cook for 10 minutes, stirring continuously.
  3. Add chopped onions to the skillet.
  4. Season with parsley, sweet basil, and salt and pepper to taste.
  5. Let simmer until the vegetables are tender.
