- Stir in ketchup, water, Worcestershire sauce, and vinegar to make the sauce.
- Place the beef chuck roast in a 13 x 9 x 2-inch baking dish.
- Pour the ketchup mixture over the roast.
- Cover and cook in a medium (350°F) oven for 45 minutes, turning the dish halfway through.
- Add sliced onion and green pepper, then cover and cook for an additional 30 to 45 minutes, until the vegetables are tender, turning the dish once.
- Skim fat from the pan juices and serve with the roast.
