Ingredients

  • 3 Tbsp. flour
  • 1 Tbsp. brown sugar
  • 1 tsp. salt
  • dash of pepper
  • 1/2 tsp. dry mustard
  • 3/4 c. catsup
  • 1/2 c. water
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. vinegar
  • 1 (4 lb.) beef chuck roast
  • 1 onion, sliced
  • 1 green pepper, sliced

Instructions

  1. In a bowl, combine flour, brown sugar, salt, pepper, and dry mustard.
  2. Stir in ketchup, water, Worcestershire sauce, and vinegar to make the sauce.
  3. Place the beef chuck roast in a 13 x 9 x 2-inch baking dish.
  4. Pour the ketchup mixture over the roast.
  5. Cover and cook in a medium (350°F) oven for 45 minutes, turning the dish halfway through.
  6. Add sliced onion and green pepper, then cover and cook for an additional 30 to 45 minutes, until the vegetables are tender, turning the dish once.
  7. Skim fat from the pan juices and serve with the roast.
