Ingredients

  • 1/2 c. chopped onions
  • 1/2 c. chopped celery
  • 1/4 c. chopped bell pepper
  • 1/2 c. grated sharp Cheddar cheese
  • 1 can Shoepeg corn, drained
  • 1 can French green beans, drained
  • 1 c. cream of celery soup
  • 1/2 pt. sour cream
  • salt and pepper to taste
  • 1 stick oleo
  • 1 stack Ritz crackers

Instructions

  1. Mix chopped onions, chopped celery, chopped bell pepper, grated Cheddar cheese, drained shoepeg corn, drained green beans, cream of celery soup, and sour cream. Add salt and pepper to taste.
  2. Place the mixture in a 9 x 13-inch baking pan.
  3. Melt oleo and mix with crushed Ritz crackers.
  4. Spread the crushed cracker mixture evenly on top of the vegetable mixture.
  5. Bake at 350°F (175°C) for 45 minutes until bubbly and golden.
