Ingredients

  • 1 large clove garlic, chopped fine
  • 1/2 green pepper, chopped fine
  • 2 Tbsp. onion, chopped fine
  • 2 Tbsp. celery, chopped fine
  • 1 can mushroom soup (undiluted)
  • 1 1/2 cups cooked rice
  • Juice of 1/2 lemon
  • 1 Tbsp. parsley flakes
  • 1 lb. cooked (steamed) shrimp
  • 2 Tbsp. melted butter
  • 1/4 tsp. black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix chopped garlic, green pepper, onion, celery, mushroom soup, cooked rice, lemon juice, parsley flakes, cooked shrimp, melted butter, and black pepper in a bowl.
  3. Place the mixture in a casserole dish.
  4. Sprinkle the top with grated Swiss cheese.
  5. Bake in the preheated oven for 30 minutes until bubbly and golden.
