Ingredients

  • 16 jumbo shrimp, cleaned and cooked
  • 2 Tbsp. olive oil
  • 2 Tbsp. butter
  • 1 medium onion, minced
  • 1/2 medium green pepper, cut up
  • 12 large mushrooms, sliced
  • 1 clove garlic
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. oregano
  • 1/2 c. dry white wine

Instructions

  1. Cut each shrimp in half lengthwise.
  2. In a large skillet, heat olive oil and butter.
  3. Add minced onion, green pepper, sliced mushrooms, garlic, salt, and pepper.
  4. Saute until vegetables are tender.
  5. Add the halved shrimp and oregano to the skillet.
  6. Cook for 5 minutes longer.
  7. Add white wine and cook briefly before serving.
