Ingredients

  • 1 1/2 lb. shrimp, deveined and slightly steamed
  • 3 Tbsp. diet margarine
  • 1 Tbsp. flour
  • 1/2 cup skim milk
  • 1 tsp. minced onion or Vidalia onion
  • 1 1/2 tsp. Worcestershire sauce
  • 2 slices diet white bread, cubed
  • 1/2 cup diet mayonnaise
  • 1 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Melt margarine in a saucepan and mix in flour.
  2. Gradually stir in skim milk and cook until it boils and thickens.
  3. Add minced onion, Worcestershire sauce, and bread cubes; let cool.
  4. Fold in diet mayonnaise, lemon juice, salt, and pepper.
  5. Melt 2 tablespoons of margarine and toss in chopped shrimp; mix well.
  6. Fill baking shells with the shrimp mixture.
  7. Reserve 1/2 pound of shrimp to garnish the top in the last 3 minutes of baking; place on top of the shells.
  8. Lightly sprinkle with paprika.
  9. Bake at 450°F for 7 to 10 minutes until heated through.
