Shrimp Royale

Ingredients
- 1 1/2 lb. shrimp, deveined and slightly steamed ⓘ
- 3 Tbsp. diet margarine ⓘ
- 1 Tbsp. flour ⓘ
- 1/2 cup skim milk ⓘ
- 1 tsp. minced onion or Vidalia onion ⓘ
- 1 1/2 tsp. Worcestershire sauce ⓘ
- 2 slices diet white bread, cubed ⓘ
- 1/2 cup diet mayonnaise ⓘ
- 1 Tbsp. lemon juice ⓘ
- 1/2 tsp. salt ⓘ
- 1/4 tsp. pepper ⓘ
Instructions
- Melt margarine in a saucepan and mix in flour.
- Gradually stir in skim milk and cook until it boils and thickens.
- Add minced onion, Worcestershire sauce, and bread cubes; let cool.
- Fold in diet mayonnaise, lemon juice, salt, and pepper.
- Melt 2 tablespoons of margarine and toss in chopped shrimp; mix well.
- Fill baking shells with the shrimp mixture.
- Reserve 1/2 pound of shrimp to garnish the top in the last 3 minutes of baking; place on top of the shells.
- Lightly sprinkle with paprika.
- Bake at 450°F for 7 to 10 minutes until heated through.
