Shrimp Saute Rockefeller features succulent shrimp topped with a rich, creamy spinach and bacon mixture, finished with Pernod and Hollandaise for a luxurious seafood appetizer.

Ingredients

  • 1 lb. large shrimp, cleaned
  • 2 Tbsp. butter
  • 1/2 lb. bacon, diced
  • 3 Tbsp. onion, diced
  • 10 oz. chopped spinach
  • 1/2 c. heavy cream
  • dash Tabasco sauce
  • salt and pepper
  • 1 Tbsp. anchovy paste
  • 1/4 c. Pernod
  • 1 c. Hollandaise Sauce
  • 1/4 c. San Francisco seafood breadcrumbs

Instructions

  1. In a large skillet, fry the bacon until crispy and render the fat.
  2. Add the diced onions and sauté briskly until translucent.
  3. Stir in the chopped spinach, anchovy paste, Tabasco, heavy cream, and breadcrumbs.
  4. Cook over moderately high heat until the mixture thickens.
  5. Season with salt, pepper, and add Pernod before serving.
  6. Add the cleaned shrimp to the skillet and cook until pink and opaque.
  7. Serve topped with Hollandaise Sauce.
