A creamy shrimp and spinach casserole with mushrooms, green onions, and melted mozzarella, perfect for a comforting family dinner or entertaining guests.

Ingredients

  • 1 1/2 lb raw peeled shrimp
  • 1/2 lb fresh sliced mushrooms
  • 1/2 cup chopped green onions
  • 2 tablespoons chopped green pepper
  • 1 tablespoon flour
  • 1 cup sour cream
  • 2 tablespoons pimentos
  • 1 teaspoon soy sauce
  • 10 oz chopped spinach, thawed and well drained
  • 1/2 cup grated Mozzarella cheese

Instructions

  1. Lightly sauté mushrooms, green onions, and green pepper in 3 tablespoons of butter for 1 minute.
  2. Add flour, stir, and cook for 1 more minute. Remove from heat.
  3. Combine all ingredients, saving enough cheese to sprinkle on top.
  4. Transfer mixture to a buttered casserole dish.
  5. Sprinkle with remaining cheese on top.
  6. Bake at 400°F for 20 to 30 minutes until bubbly and golden.
