Ingredients

  • 2 Cups diced fresh peaches
  • 1/4 Cup thinly sliced green onion
  • 3 Tbsp. orange juice
  • 1 tsp. grated lime rind
  • 2 Tbsp. chopped, seeded jalapeno pepper
  • 1 Tbsp. chopped cilantro
  • 1 Tbsp. honey
  • 1 tsp. minced, fresh, peeled ginger
  • 1 1/2 lb. pre-cooked shrimp with tails on

Instructions

  1. Combine all ingredients except shrimp in a medium bowl.
  2. Cover and chill the mixture.
  3. To serve, spoon a small mound of peach salsa onto each plate and arrange the pre-cooked shrimp around it.
  4. Garnish with lime and cilantro before serving.
