Ingredients

  • 3 lb. cooked and deboned fryer chicken
  • 2 cups chicken broth
  • 1 tablespoon chopped celery
  • 1 tablespoon chopped onion
  • dash of pepper
  • 1 can cream of chicken soup or celery
  • 2 hard-boiled eggs, chopped
  • 1/4 cup melted butter
  • 1 cup self-rising flour
  • 1 cup buttermilk

Instructions

  1. Cut cooked and deboned chicken into bite-sized pieces, season with salt and pepper.
  2. Mash and dissolve the chicken bouillon cube in the chicken broth and cream of chicken or celery soup, then heat to boiling.
  3. Grease a casserole dish.
  4. Place the chicken on the bottom of the casserole and sprinkle with chopped hard-boiled eggs.
  5. Pour the hot broth mixture over the chicken and eggs.
  6. Mix self-rising flour, melted butter, and buttermilk until smooth to make the batter.
  7. Spoon the batter evenly over the chicken mixture to cover.
  8. Bake at 350°F until the top is browned and the filling is bubbling, about 45 minutes.
