Ingredients

  • 1 (15 1/4 oz.) can whole kernel corn, drained
  • 1 cup flour
  • 1 cup cornmeal
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 egg whites
  • 3/4 cup fat-free milk
  • 1/4 cup canola oil
  • 1 cup shredded reduced-fat Cheddar cheese
  • 1 (4 oz.) can chopped green chilies

Instructions

  1. In a food processor or blender, coarsely chop the corn and set aside.
  2. In a bowl, combine flour, cornmeal, baking soda, and salt.
  3. In a small bowl, whisk together egg, egg whites, milk, and oil.
  4. Pour the wet mixture into the dry ingredients and stir until just moistened.
  5. Fold in the shredded cheese, chopped green chilies, and chopped corn.
  6. Pour the batter into a 9-inch square baking dish coated with nonstick cooking spray.
  7. Bake at 350°F (175°C) for 40 to 45 minutes, or until a toothpick inserted near the center comes out clean.
  8. Serve warm.
