Ingredients

  • 10 lb fresh spinach
  • 1 1/2 c olive oil
  • 2 large onions
  • 1 bunch scallions
  • 1 bunch parsley
  • 1/2 c dill leaves
  • 1/4 c mint leaves
  • 1/4 c oregano
  • salt and pepper to taste
  • 1 1/2 lb Feta cheese
  • 2 c milk
  • 4 eggs
  • 1 1/2 c olive oil
  • 1/2 c vegetable oil

Instructions

  1. Cook onions, scallions, and parsley with olive oil until softened.
  2. Add spices (dill, mint, oregano) and cook on low heat, stirring constantly.
  3. In a bowl, crumble feta cheese and add milk and beaten eggs, mixing well.
  4. Chop fresh spinach and combine with the cheese mixture.
  5. Add cooled herb mixture to the spinach and mix thoroughly.
  6. Pour the mixture into a prepared baking dish or pie crust.
  7. Bake at 350°F (175°C) for approximately 45 minutes until golden brown.
