  • 5 10 oz. packages frozen spinach
  • 4 1/2 cups milk

  • 5 tablespoons melted butter
  • 6 tablespoons flour

  • 8 oz. cheddar cheese
  • 4 oz. Monterey Jack cheese
  • 1 1/2 cups grated Monterey Jack cheese

Instructions

  1. Remove as much water as possible from the frozen spinach and set aside.
  2. Gradually heat the milk in a saucepan and add the dry mustard, garlic powder, and crushed red pepper.
  3. Saute the chopped onion in 1 tablespoon of butter until tender and clear.
  4. Add the cooked onion and milk mixture to the saucepan.

  14. Season with salt to taste.
