Ingredients

  • 1 1/2 lb ground beef
  • 1/2 cup chopped onions
  • 2 large jalapeno peppers
  • 2 hot links, chopped
  • 12 corn or flour tortillas
  • 1 (28 oz) can enchilada sauce
  • 1 large can spicy refried beans
  • 1 can chopped olives
  • Monterey cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brown the ground meat in a skillet; boil the chicken with chopped onions and jalapenos until cooked.
  3. Drain excess grease from the ground meat and water from the chicken.
  4. Chop the hot links and add them to the meat mixture, stirring well.
  5. Heat the enchilada sauce and spicy refried beans until warmed.
  6. Dip a tortilla in the heated sauce, then spread refried beans on the tortilla.
  7. Add a portion of the meat mixture on top of the beans, sprinkle with a small amount of cheese, and fold the tortilla with seams side down.
  8. Repeat with remaining tortillas.
  9. Pour remaining sauce over assembled enchiladas, sprinkle with remaining cheese, and top with chopped olives if desired.
  10. Bake until the cheese is melted and bubbly, about 20-25 minutes.
