  • 1 bay leaf, crumbled
  • 2 cloves garlic, minced
  • 3/4 tsp. black pepper
  • 4 oz. boned, skinned chicken breast, chopped fine
  • 1 (1 lb.) can low sodium tomatoes, chopped with juice
  • 2 Tbsp. low sodium tomato paste
  • 8 lasagne noodles, ruffled edge
  • 1/2 cup grated Parmesan cheese
  • 1 cup part skim Ricotta cheese
  • 1/2 lb. fresh spinach, chopped or thawed frozen spinach, drained
  • 1/4 tsp. ground mace or nutmeg
  • 1/4 tsp. cream of tartar

Instructions

  1. Heat olive oil in a heavy 10-inch skillet over moderate heat for 1 minute.
  2. Add the chopped onion, dried basil, dried marjoram, crumbled bay leaf, half of the minced garlic, and 1/4 teaspoon of black pepper.
  3. Cook uncovered until the onion is soft, about 5 minutes.
  4. Remove 2 tablespoons of the mixture and set aside for later use.
  5. Add chopped chicken breast to the skillet and cook until no longer pink, about 5 minutes.
  6. Stir in chopped tomatoes with juice, tomato paste, and remaining garlic. Simmer for 10 minutes.
  7. Meanwhile, cook lasagne noodles according to package instructions until al dente. Drain and set aside.

  9. Spread a thin layer of the tomato sauce over each lasagne noodle.
  10. Place a spoonful of the cheese and spinach mixture on one end of each noodle.
  11. Roll up the noodles to enclose the filling and place seam-side down in a baking dish.
  12. Pour remaining tomato sauce over the roll-ups and sprinkle with additional Parmesan if desired.
  13. Bake at 375°F (190°C) for 20-25 minutes until bubbly and heated through.

Tips & Substitutions

For a spicier kick, consider adding crushed red pepper flakes to the chicken mixture. If you're short on time, you can use pre-cooked chicken or even shredded rotisserie chicken as a substitute. For a vegetarian option, replace the chicken with lentils or mushrooms. Feel free to mix in different cheeses, such as mozzarella, for a creamier texture.
