Ingredients

  • 1 (18 1/4 oz.) package spice cake mix
  • 1 1/4 cups quick-cooking oats
  • 1/2 cup margarine (soft)
  • 1/4 cup firmly packed brown sugar
  • 3 eggs, divided
  • 1/4 cup chopped nuts
  • 1 (16 oz.) can pumpkin
  • 1 (14 oz.) can sweetened condensed milk
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • whipped cream or ice cream (for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, beat together the cake mix, oats, margarine, sugar, and 1 egg until crumbly.
  3. Reserve 2 cups of the crumb mixture for topping.
  4. Press the remaining crumb mixture firmly into the bottom of a 13 x 9-inch baking dish.
  5. Bake the crust for 15 minutes.
  6. In a separate bowl, combine pumpkin, sweetened condensed milk, 2 eggs, cinnamon, ground ginger, nutmeg, and salt; mix well.
  7. Pour the pumpkin mixture over the baked crust.
  8. Sprinkle the reserved crumb mixture over the top.
  9. Bake for an additional 35-40 minutes until set.
  10. Allow to cool before serving with whipped cream or ice cream.
