Ingredients
- 1 1/4 cups packed brown sugar ⓘ
- 1/2 cup margarine or butter, softened ⓘ
- 2 eggs ⓘ
- 1 teaspoon vanilla ⓘ
- 2 cups whole wheat flour ⓘ
- 2 teaspoons baking soda ⓘ
- 3/4 teaspoon ground cinnamon ⓘ
- 1/2 teaspoon ground nutmeg ⓘ
- 1/4 teaspoon ground cloves ⓘ
- 1 1/2 cups shredded zucchini ⓘ
- 1 cup golden raisins ⓘ
- Cream Cheese Frosting ⓘ
Instructions
- Preheat oven to 350°F (175°C). Grease a 13 x 9 x 2-inch rectangular pan.
- In a large bowl, mix brown sugar, margarine or butter, eggs, and vanilla until well combined.
- Stir in whole wheat flour, baking soda, cinnamon, nutmeg, and cloves until just mixed.
- Fold in shredded zucchini and raisins until evenly distributed.
- Spread the batter into the prepared pan.
- Bake for 25 to 35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool, then frost with Cream Cheese Frosting.
- Cut into 2 x 1.5-inch bars and serve. Refrigerate any remaining bars.
