Ingredients

  • 1 1/4 cups packed brown sugar
  • 1/2 cup margarine or butter, softened
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups whole wheat flour
  • 2 teaspoons baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 1/2 cups shredded zucchini
  • 1 cup golden raisins
  • Cream Cheese Frosting

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 13 x 9 x 2-inch rectangular pan.
  2. In a large bowl, mix brown sugar, margarine or butter, eggs, and vanilla until well combined.
  3. Stir in whole wheat flour, baking soda, cinnamon, nutmeg, and cloves until just mixed.
  4. Fold in shredded zucchini and raisins until evenly distributed.
  5. Spread the batter into the prepared pan.
  6. Bake for 25 to 35 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool, then frost with Cream Cheese Frosting.
  8. Cut into 2 x 1.5-inch bars and serve. Refrigerate any remaining bars.
