Ingredients

  • 10 oz. frozen chopped spinach
  • 1/2 cup chopped onion
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • 2 oz. shredded Cheddar cheese
  • 1/3 cup Blue cheese salad dressing
  • 2 Tbsp. margarine
  • 1/8 tsp. garlic powder
  • 1 (8 1/2 oz.) package corn muffin mix

Instructions

  1. Cook spinach with chopped onion according to package directions. Drain well.
  2. Press out excess liquid from the spinach mixture.
  3. In a medium mixing bowl, stir together the eggs, Parmesan cheese, Cheddar cheese, Blue cheese salad dressing, melted margarine, and garlic powder.
  4. Stir in the cooked spinach mixture and the corn muffin mix until well combined.
  5. Shape the mixture into 1-inch balls and arrange them on a baking sheet.
  6. Cover and chill until serving time.
  7. Bake at 350°F (175°C) for 10 to 12 minutes until golden and heated through.
  8. Serve with Dijon mustard or sour cream as a dip. Puffs can be frozen and baked as needed.
