Ingredients

  • 1 lb. butter
  • 1 lb. golden raisins
  • 12 eggs
  • 4 c. sugar
  • 2 Tbsp. cinnamon
  • 1 1/2 tsp. nutmeg
  • 2 Tbsp. vanilla
  • 3 c. self-rising flour
  • 3 qt. whole pecan halves
  • 1 (8 oz.) pkg. dates
  • 1 lb. red cherries
  • 1 lb. green cherries
  • 1 lb. coconut
  • 1 lb. pineapple

Instructions

  1. Cream butter and sugar together.
  2. Add eggs, cinnamon, nutmeg, and vanilla; mix well.
  3. Put raisins in hot water and set aside.
  4. Cut up all fruits and set aside.
  5. Combine all cut-up fruit and whole pecan halves in a large pan.
  6. Drain raisins and add to the fruit mixture.
  7. Sprinkle flour over the fruit mixture.
  8. Stir with hands to coat the fruit evenly.
  9. Add the butter and sugar mixture and stir well with hands.
  10. Use a large roaster for mixing and baking.
  11. Bake at 350°F (175°C) for 1.5 hours, stirring every 15 minutes during baking.
  12. Remove from oven and pack into greased tube or loaf pans lined with wax paper.
  13. Let stand overnight.
  14. Return to a warm oven for 5 minutes, then remove from pans.
