Instructions

  1. Prepare rice according to package instructions and keep warm.
  2. Cut chicken breasts into 1/4-inch strips on the diagonal.
  3. In a medium bowl, mix chicken, soy sauce, dry sherry, cornstarch, minced ginger, sugar, and garlic powder. Set aside.
  4. Thinly slice mushrooms and cut green onions into 3-inch pieces.
  5. In a large skillet or wok over medium heat, heat 4 tablespoons of salad oil and cook mushrooms and green onions until tender, about 2 minutes.
  6. Remove mushroom mixture from the wok and set aside.
