- Partially cook the bacon slices.
- Drain the bacon, reserving 2 tablespoons of drippings, and set bacon aside.
- Cook chopped onion and minced garlic in the reserved drippings until tender, but not browned.
- In a bowl, combine ground beef, cooked onion and garlic, egg, tomato sauce, bread crumbs, drained mushrooms, parsley, salt, and pepper. Mix well.
- Divide the meat mixture into 4 equal parts.
- Place 2 slices of bacon side by side on wax paper.
- Cut another bacon slice in half crosswise and place the halves at one end of the bacon slices, overlapping slightly.
- Pat 1/4 of the meat mixture evenly over the bacon on the wax paper.
- Roll up the bacon and meat mixture jelly-roll style, starting from the narrow end.
