Ingredients

  • 12 slices bacon
  • 1 medium onion
  • 2 cloves garlic
  • 1 egg
  • 1/2 cup tomato sauce
  • 3/4 cup soft bread crumbs
  • 1 (4 oz.) can sliced mushrooms, drained
  • 2 tablespoons snipped parsley
  • 1 pound ground beef
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Partially cook the bacon slices.
  2. Drain the bacon, reserving 2 tablespoons of drippings, and set bacon aside.
  3. Cook chopped onion and minced garlic in the reserved drippings until tender, but not browned.
  4. In a bowl, combine ground beef, cooked onion and garlic, egg, tomato sauce, bread crumbs, drained mushrooms, parsley, salt, and pepper. Mix well.
  5. Divide the meat mixture into 4 equal parts.
  6. Place 2 slices of bacon side by side on wax paper.
  7. Cut another bacon slice in half crosswise and place the halves at one end of the bacon slices, overlapping slightly.
  8. Pat 1/4 of the meat mixture evenly over the bacon on the wax paper.
  9. Roll up the bacon and meat mixture jelly-roll style, starting from the narrow end.
