Ingredients

  • 1 to 2 lb. flank steak
  • 1 large onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 12 mushrooms
  • 1/2 tsp. salt
  • 1 Tbsp. thyme
  • 4 slices bacon
  • 2 Tbsp. bread crumbs
  • 6 oz. fresh spinach
  • 1 apple
  • prepared mustard
  • a little oil

Instructions

  1. Saute the steak, chopped onion, green pepper, red pepper, and sliced mushrooms in a little oil, then add salt and thyme.
  2. Saute the bacon, cut it up, and drain well.
  3. Add the cooked bacon to the first mixture.
  4. Add bread crumbs, fresh spinach, and sliced apple to the mixture and spread mustard of your choice on the meat.
  5. Place the filling on the long side of the meat.
  6. Lay spinach leaves on top of the filling.
  7. Put sliced apples on top of the spinach leaves.
  8. Roll the meat like a jelly roll and tie with string.
  9. Bake in a pan sprayed with Pam at 350°F for 1 1/2 hours.
