Ingredients

  • 2 (1 lb.) flank steaks
  • 1 slightly beaten egg
  • 1 (10 oz.) pkg. frozen chopped spinach, well drained
  • 1 (8 oz.) pkg. yellow American cheese
  • 1/2 tsp. ground sage
  • 1/4 tsp. salt
  • dash of pepper
  • 3/4 c. soft bread crumbs
  • 2 Tbsp. oil
  • 1 (8 oz.) can tomato sauce
  • 1/2 c. dry red wine
  • 1/2 c. chopped onion
  • 1/2 tsp. garlic powder
  • 2 Tbsp. all-purpose flour

Instructions

  1. Pound each steak with a mallet to 1/3-inch thickness; set aside.
  2. Combine the beaten egg, drained chopped spinach, American cheese, ground sage, salt, and pepper in a bowl.
  3. Stir in the soft bread crumbs into the mixture.
  4. Spread the spinach mixture over each steak.
  5. Starting from the narrow side, roll up each steak jelly roll fashion.
  6. Tie each rolled steak with string to secure.
  7. In a large skillet, brown the steak rolls in oil on all sides.
  8. Place the browned rolls in a 10 x 6 x 2-inch baking dish.
  9. Pour tomato sauce over the rolls.
  10. Optionally, add dry red wine to the sauce.
  11. In the same skillet, sauté chopped onion until tender.
  12. Add garlic powder and cook briefly.
  13. Sprinkle flour over the onion mixture, stir well, and cook until slightly thickened.
  14. Pour the sauce mixture over the steak rolls in the baking dish.
  15. Bake in a preheated oven at 350°F (175°C) for about 30-40 minutes until cooked through.
