Ingredients

  • 1 lb. mushrooms
  • 2 Tbsp. olive oil
  • 1/4 c. chopped onions
  • 1/2 clove garlic
  • 1/3 c. dry bread crumbs
  • 3 Tbsp. grated Parmesan cheese
  • 1 Tbsp. chopped parsley
  • 1/2 tsp. salt
  • 1/8 tsp. oregano

Instructions

  1. Cut off the stems of the mushrooms and finely chop the stems.
  2. Heat the olive oil in a skillet.
  3. Add the chopped mushroom stems, onions, and garlic to the skillet.
  4. Cook slowly until lightly browned.
  5. Combine the bread crumbs, Parmesan cheese, chopped parsley, salt, and oregano in a bowl.
  6. Mix in the cooked onion, garlic, and mushroom stems.
  7. Stuff the mixture into inverted mushroom caps.
  8. Place the stuffed mushrooms in a casserole coated with olive oil.
  9. Bake at 400°F for 15 to 20 minutes or until mushrooms are tender and tops are browned.
