Stuffed Turkey Roll

- In a bowl, combine the beaten egg, quick cooking rolled oats, 1/2 teaspoon salt, and 1/8 teaspoon pepper.
- Add the ground raw turkey and mix well.
- On wax paper, pat the mixture into a 12 x 9-inch rectangle.
- In a saucepan, cook the chopped onion and celery in butter until tender.
- Stir in ground sage or poultry seasoning, 1/8 teaspoon pepper, and a dash of salt.
- Toss the bread cubes with the cooked mixture and 2 tablespoons water.
- Spread the bread cube mixture atop the turkey mixture.
- Roll up the meat mixture jelly-roll style from the narrow end, pressing the edge to seal.
- Seal the ends of the roll.
- Transfer the roll, seam side down, to a greased baking dish.
- Cut the bacon slices in half crosswise and lay them atop the turkey roll.
- Bake uncovered in a 325°F oven for 50 to 55 minutes.
