Ingredients

  • 1 beaten egg
  • 1/2 cup quick cooking rolled oats
  • 1 pound ground raw turkey
  • 1/4 cup chopped onion
  • 1/4 cup finely chopped celery
  • 1/4 cup butter or margarine
  • 1/4 teaspoon ground sage or poultry seasoning
  • 2 cups toasted bread cubes
  • 2 slices bacon
  • 1/2 teaspoon salt
  • dash of pepper

Instructions

  1. In a bowl, combine the beaten egg, quick cooking rolled oats, 1/2 teaspoon salt, and 1/8 teaspoon pepper.
  2. Add the ground raw turkey and mix well.
  3. On wax paper, pat the mixture into a 12 x 9-inch rectangle.
  4. In a saucepan, cook the chopped onion and celery in butter until tender.
  5. Stir in ground sage or poultry seasoning, 1/8 teaspoon pepper, and a dash of salt.
  6. Toss the bread cubes with the cooked mixture and 2 tablespoons water.
  7. Spread the bread cube mixture atop the turkey mixture.
  8. Roll up the meat mixture jelly-roll style from the narrow end, pressing the edge to seal.
  9. Seal the ends of the roll.
  10. Transfer the roll, seam side down, to a greased baking dish.
  11. Cut the bacon slices in half crosswise and lay them atop the turkey roll.
  12. Bake uncovered in a 325°F oven for 50 to 55 minutes.
