  • 10 c. coarsely ground squash
  • 4 c. chopped onions
  • 3 Tbsp. salt
  • 2 or 3 c. water
  • 2 1/2 c. white vinegar
  • 5 c. sugar
  • 1 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1 tsp. dry mustard
  • 1 tsp. turmeric
  • 1 tsp. celery seed
  • 1/2 tsp. pepper
  • 4 red peppers, coarsely ground and rinsed

Instructions

  1. Mix squash, onions, and salt well and let set overnight.
  2. Drain in the morning and rinse with water.
  3. Add remaining ingredients to the mixture.
  4. Mix well and cook for 15 minutes.
  5. Seal the relish in jars.
  6. Process jars in hot water bath for 5 minutes.
