Ingredients

  • 4 hard-cooked eggs
  • 1 cup uncooked long grain rice
  • 2 cups boiling water
  • 1 teaspoon salt
  • 1 tablespoon margarine
  • 1 medium yellow squash
  • 2 tablespoons flour
  • 1/4 cup grated cheese
  • 2 tablespoons margarine

Instructions

  1. Cook the rice in boiling water until tender.
  2. In a 2-quart casserole, combine cooked rice, salt, 1 tablespoon margarine, and boiling water.
  3. Add sliced yellow squash to the casserole.
  4. Make a sauce by mixing flour, 2 tablespoons margarine, milk, and grated cheese.
  5. Pour the sauce over the squash and rice mixture and stir gently.
  6. Sprinkle bread crumbs evenly on top.
  7. Arrange sliced hard-cooked eggs, cut lengthwise, on top of the dish.
  8. Bake in a 350°F oven for 45 minutes until golden and heated through.
