Ingredients

  • 3/4 lb. chuck roast, cut into 1-inch cubes
  • 1 small onion, chopped
  • 1/2 cup carrots, sliced
  • 1/2 cup cabbage, coarsely chopped
  • 1 medium potato, cubed
  • 1/2 green pepper
  • 1/2 cup sliced celery
  • 1 can chopped tomatoes
  • 1/4 cup soy sauce
  • 1/2 cup pearl barley
  • 1 teaspoon basil

Instructions

  1. Stir-fry the chuck roast, chopped onion, green pepper, and sliced celery in a large pot, using tenderizer on the meat if necessary.
  2. Add sliced carrots, coarsely chopped cabbage, cubed potato, and chopped tomatoes to the pot.
  3. Cook until the meat is tender, about 30-40 minutes.
  4. Add pearl barley and basil to the stew.
  5. Simmer until the barley is tender, about 20-30 minutes.
  6. Serve hot with salad and a simple dessert.
