Ingredients

  • 1/4 cup brown sugar
  • 1 teaspoon dry mustard
  • 2 tablespoons vinegar
  • 3 slices canned pineapple
  • salt and pepper to taste
  • 2 cups ground ham
  • 1 1/2 cups ground fresh pork
  • 2 eggs
  • 1 cup milk
  • 1/2 cup finely crumbled crackers
  • 1/2 cup finely crumbled potato chips

Instructions

  1. Mix brown sugar, dry mustard, and vinegar together.
  2. Pour the mixture into the bottom of a loaf pan.
  3. Cut slices of canned pineapple and arrange them on the bottom of the pan.
  4. Combine ground ham, ground fresh pork, beaten eggs, milk, crumbled crackers, and crumbled potato chips.
  5. Pack the meat mixture into the loaf pan, being careful not to displace the pineapple slices.
  6. Bake at 375°F (190°C) for about 1 hour and 30 minutes.
  7. Unmold the ham loaf and serve.
