Ingredients

  • 2 1/2 to 3 lb pork ribs
  • 1/4 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 cup apple cider
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 lb small red potatoes
  • 1 lb carrots
  • 4 small white onions
  • 1 small cabbage
  • 1/2 cup chopped fresh parsley

Instructions

  1. Put ribs into a large bowl.
  2. Dredge with flour to coat all sides well and reserve extra flour.
  3. Heat oil in a heavy, ovenproof Dutch oven or casserole.
  4. Brown meat on all sides over medium heat, sprinkling with reserved flour.
  5. Add apple cider, salt, and pepper. Heat to boiling, stirring to blend in flour.
  6. Cover and bake at 350°F for 30 minutes.
  7. Add potatoes, carrots, and onions.
  8. Cover and bake for 30 minutes longer.
  9. Skim fat if excessive.
  10. Add cabbage, cover, and bake for 30 minutes longer or until vegetables and meat are tender.
