Ingredients

  • 3 cups sifted flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 3 eggs
  • 2 cups sugar
  • 1/2 cup cooking oil
  • 2 teaspoons vanilla extract
  • 2 cups raw carrots, grated
  • 1 1/2 cups chopped pecans
  • 1 cup crushed pineapple

  6. Pour the batter into a well-greased and floured pan.
