Instructions

  1. Peel, slice, and boil the sweet potatoes until just tender. Mash them well.
  2. Fry the sausage until done, breaking it up with a fork as it cooks. Remove the sausage and set aside.
  3. Saute the onions and celery in the sausage drippings until tender.
  4. Place the mashed sweet potatoes, sausage, celery, and onions in a large bowl.
  5. Add the bread crumbs, raisins, parsley, thyme, sage, salt, and pepper to taste.
  6. Gently stir until well mixed.
  7. Add diced apples and chopped pecans if desired.
  8. If using, add nutmeg and mace when including pecans and apples.
