  • flour
  • oil
  • 1/2 medium-size onion
  • 1 c. Sauterne or other white dinner wine
  • 1 (6 oz.) can sliced mushrooms

Instructions

  1. Pound the round steak to tenderize.
  2. Cut the steak into 6 serving-sized pieces.
  3. Sprinkle each piece with salt and pepper.
  4. Dip the steak pieces in flour to coat.
  5. In a heavy skillet, brown the meat in heated oil along with the sliced mushrooms and chopped onions.
  6. Add the white wine and the juice from the canned mushrooms to the skillet.
  7. Cover and cook over low heat for 1 to 1 1/2 hours, or until the meat is tender.

Tips & Substitutions

For added flavor, consider marinating the round steak in the Sauterne wine for a few hours before cooking. If you don't have Sauterne, any dry white wine can work as a substitute. You can also enhance the dish with additional herbs like thyme or bay leaves during cooking. If you prefer a thicker sauce, mix in a cornstarch slurry at the end of cooking.

Serving Suggestions

Serve Swiss Steak over a bed of mashed potatoes or egg noodles to soak up the flavorful sauce. A side of steamed vegetables or a fresh salad pairs nicely, adding a refreshing contrast to the rich dish. For a complete meal, consider serving with crusty bread to enjoy the sauce. It pairs beautifully with American recipes like Easy Beef Bake.

Storage & Reheating

Leftover Swiss Steak can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place it in a skillet over low heat with a splash of water or broth to prevent drying out, or microwave it covered until warmed through. This dish can also be frozen for up to 3 months; just thaw in the refrigerator before reheating.

Yes, while round steak is traditional, you can use other cuts such as chuck steak or flank steak. Just be aware that cooking times may vary depending on the cut's tenderness.

What can I use instead of mushrooms?

If you’re not a fan of mushrooms, you can omit them entirely or substitute with diced bell peppers or zucchini for added texture and flavor.

Is there a way to make this dish more flavorful?
