Ingredients

  • 1 1/2 lb. ground beef
  • 2 tsp. salt
  • 1 c. chili sauce
  • 1/8 tsp. pepper
  • 1 c. flour
  • 1 c. cornmeal
  • 1 Tbsp. shortening
  • 1 egg
  • 1/2 c. water
  • 1 1/2 c. shredded Cheddar cheese
  • 2 c. shredded lettuce

Instructions

  1. Brown ground beef in a skillet.
  2. Add 2 teaspoons of salt, chili sauce, and 1/8 teaspoon of pepper to the beef.
  3. Simmer the beef mixture for 5 to 10 minutes.
  4. Combine flour, cornmeal, and 2 teaspoons of salt in a mixing bowl.
  5. Cut in shortening until the mixture resembles fine particles.
  6. Combine egg and water; sprinkle over the flour mixture while stirring with a fork until the dough holds together.
  7. If the dough is sticky, toss it onto a well-floured surface.
  8. Divide the dough into 12 portions.
  9. Roll each portion on a floured surface into a 6-inch circle.
  10. Fry each tortilla in hot deep fat at 375°F until golden brown, about 1 minute per side.
  11. Remove from fat and immediately fill each with 1 to 2 tablespoons of warm ground beef, cheese, and lettuce.
  12. Fold the filled tortilla in half to serve.
