- Soak dried pinto beans in water for 8 hours.
- Spray a large Dutch oven with cooking spray.
- Add chopped onion, celery, green onions, green pepper, and garlic to the Dutch oven and sauté until tender.
- Drain the soaked beans and add them to the vegetables in the Dutch oven.
- Cover with fresh water and add salt, red pepper, Italian seasoning, black pepper, hot sauce, and bay leaves.
- Bring the mixture to a rolling boil, then reduce heat to simmer.
- Check often and add water if necessary during cooking.
- Cook for 2 to 3 hours or until beans are tender.
- During the last hour of cooking, add chopped ham or sausage.
