Ingredients

  • 1 lb dried pinto beans
  • cooking spray
  • 2 c chopped onion
  • 2 1/2 c chopped celery
  • 1 c chopped green onions
  • 1 c chopped green pepper
  • 4 cloves garlic
  • 1 tsp salt
  • 1 tsp red pepper
  • 1 tsp Italian seasoning
  • 1 tsp black pepper
  • 1 tsp hot sauce
  • 2 bay leaves
  • water
  • 1 slice ham, cut up

Instructions

  1. Soak dried pinto beans in water for 8 hours.
  2. Spray a large Dutch oven with cooking spray.
  3. Add chopped onion, celery, green onions, green pepper, and garlic to the Dutch oven and sauté until tender.
  4. Drain the soaked beans and add them to the vegetables in the Dutch oven.
  5. Cover with fresh water and add salt, red pepper, Italian seasoning, black pepper, hot sauce, and bay leaves.
  6. Bring the mixture to a rolling boil, then reduce heat to simmer.
  7. Check often and add water if necessary during cooking.
  8. Cook for 2 to 3 hours or until beans are tender.
  9. During the last hour of cooking, add chopped ham or sausage.
