Ingredients

  • 1 c. yellow cornmeal
  • 2 eggs, beaten well
  • 1 c. sweet milk
  • 3/4 tsp. salt
  • 1 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 1/4 c. flour
  • 1/2 c. bacon drippings or oil
  • 1 can cream-style corn
  • 1 lb. hamburger meat
  • 1/2 lb. cheese
  • 1 large onion, chopped
  • 2 to 4 large jalapeno peppers, chopped

Instructions

  1. Mix the first eight ingredients (cornmeal, eggs, milk, salt, sugar, baking powder, flour, bacon drippings or oil) together to make the batter.
  2. Add the can of cream-style corn to the batter and mix well; set aside.
  3. Grease a 9 x 13-inch baking dish.
  4. Pour half of the batter mixture into the prepared pan.
  5. Layer the hamburger meat, cheese, chopped onion, and chopped jalapenos over the batter.
  6. Add the remaining batter on top of the layered ingredients.
  7. Bake in a preheated oven at 350°F (175°C) for 35 to 40 minutes until golden and cooked through.
