Ingredients

  • 1 lb. ground beef
  • 2 medium onions, sliced
  • 1 large green pepper, chopped
  • 1 (16 oz.) can tomatoes
  • 1/2 cup chopped celery
  • 1/2 cup uncooked regular rice
  • 1 small can mushrooms, sliced
  • 2 teaspoons salt
  • 1 to 2 teaspoons chili powder
  • 1/4 teaspoon pepper

Instructions

  1. Brown the ground beef in a skillet.
  2. Add sliced onions, chopped celery, chopped green pepper, sliced mushrooms, salt, chili powder, and pepper; cook until vegetables are tender.
  3. Drain off excess fat.
  4. Stir in canned tomatoes and uncooked rice; heat through.
  5. Pour the mixture into an ungreased 2-quart casserole dish.
  6. Cover and bake at 350°F for 1 hour.
